Meet GirlCrew Kildare member, Francesca Giampa, owner and baker at Once Upon a Time Cakes

Most of us in GirlCrew have probably seen Francesca Giampa’s name pop up now and again. Francesca has been a member since the early days, but outside of her GirlCrew life, she is also an amazing baker. After studying as a chef for four years in Switzerland, Francesca moved to the Emerald Isle and settled down with her soon-to-be husband. Luckily, for the residents of Celbridge, Francesca chose Kildare as her new home and set up shop. Once upon a Time Cakes create custom cakes and baked treats for every occasion.

From wedding cakes to birthday cakes, to treats for seasonal holidays and anything in between, Francesca has whipped something up for every occasion and she prides herself on going that extra mile for the customer. All the cakes are intricately designed, and any details are hand-painted, so you know you are going to get something special when you order from this company. Her award-winning creations are not only gorgeous on the outside, but they taste great too. Those of us who attended the first GirlCrew Time Out event in Dublin were treated to some festive goodies courtesy of her company and I can tell you from personal experience that they were amazing. Beautifully decorated, filled a delicious lemony filling, and perfectly moist, the cupcakes were topped with festive edible toppers like snowmen, and Santa Clause. Its’s safe to say I wasn’t the only one who enjoyed them, as they were devoured in record time and everyone looked pretty pleased with themselves as they tucked in. Like all good businesswomen, Francesca also has her eye on her next venture “I always loved creating cakes and pastry, [and] my dream is to open my own coffee shop.” If the success of her current business is anything to by, we are sure this will be a hit too.

1. What is the best thing about your role?

I can be as creative as I want, and plan my time the way I want to.

2. What did you find most challenging about it?

If you don’t have any orders you don’t have a wage.

3. What is your proudest work related achievement to date?

Seeing my cakes displayed in brown Thomas, having them showcased in a magazine, and winning 3rd place twice in Cake International.

4. What would be your one tip to others who want to get involved in this industry?

Research how many people are actually already doing what you are doing. Get insurance for your business and register your business name, as soon as you get payment for something its not a hobby anymore, a lot of people seem to forget that.
